Bologna, like other processed meats, may be classified as one of the least healthy foods in the Western diet. It has been estimated that 800,000 lives could be saved each year if bologna and other processed meats were eliminated from the diet.
Processed meats can include ham, sausage, bacon, deli meats (such as bologna, smoked turkey and salami), hot dogs, jerky, pepperoni and even sauces made with those products. When meat is processed, it is transformed through curing, fermenting, smoking or salting in order to boost flavor and shelf life.
Lower in saturated fat than beef or lamb
The majority of the fat in pork is healthy mono-saturated fat with small but higher levels of polyunsaturated fats compared to other red meats. This means pork, including ham, offers a more favourable fat content than most other red meats.
Bologna fits into the USDA definition of cured, cooked sausages which also includes hot dogs, cooked bratwursts and knockwurst, made from different kinds of chopped or ground meats which have been seasoned, cooked and/or smoked.
There are a few kinds of deli meat that are healthier choices: turkey, chicken or roast beef, Crumble Smith says. Salami, bologna, pepperoni and pastrami, for example, have more sodium and are generally more processed.

Uncured ham, also labeled as "fresh ham" is the same cut as cured ham. The difference? Uncured ham is not injected with the same chemical brine, smoke, or flavorings that are used in cured meat.

Stick with lean cuts of meat
“These types of deli meat have the least amount of fat and provide a better nutrient value compared to others,” Zumpano says. Highly processed lunch meats like salami, pastrami and bologna tend to be chock full of saturated fat and sodium.
The healthiest deli meats are preservative free and would be those derived from poultry; turkey, and chicken breast instead of beef or pork because the saturated fat content and calories per serving are much lower.
